"In many countries worldwide, legislation on the safety and suitability of foodstuffs requires HACCP (Hazard Analysis Critical Control Points) to be put in place. In addition to HACCP requirement, prerequisite programs are one of the most important part of comprehensive HACCP implementation, prerequisite programs should be well specified and documented, fully operational and verified. In order to facilitate the successful application and implementation of HACCP, various HACCP requirements or criteria are being developed and applied in the individual countries; these differ greatly in contents and levels, and some call for third-party auditing organizations. In different countries, the experience acquired in HACCP implementation differs substantially because the auditors have different levels of experience and knowledge, resulting in various levels of implementation of certified HACCP systems. On the other hand, it seems that all food producers need to have a designed, operated and continually improved program within the framework of a structured food safety management system, and combine it with all management processes within the organization.

ISO 22000 was established in 2005 for addressing food safety management systems by the combination of quality management systems with HACCP and prerequisite programs. There are so many ways to improve an operation. Professional assistance is necessary to get the job done right. We finally broke down and installed a proper water filtration system in our office. This could have easily been a weekend project, but rather than spend the time we decided to bring in an expert. Guess what?
